Colour: light green, intense, transparent

Fragrance; very persistent, elegant, with olive's smell, light artichoke, bitter almond, and sylvan's perfum.

Taste: aromatic, fruity and sweet, slightly" hot" due to the presence of chlorophil and not to much for natural acids. Round taste and oily to perfection.

Olives varietys: Frantoio, Moraiolo, Correggiolo.

Harvest: picking by hand, starting in November.

Olives trees: 2 hectares of olive groves that surround the estate, at 400 m. altitude.

Press: the olives are picked when perfectly ripened and token the same day to be cold pressed and without filtering then.

These and other factors ensure a particulary high quality oil in just 500 bottles a year.
